Cool & Spicy Cucumber Salad (Oi Muchim)


I have said many times before that Korean food is very seasonal. I especially look forward to the summer dishes like tangy Mul Kimchi (“water kimchi”), Oi Seobaggi (Cucumber Kimchi), and all the bright cool summer dishes that refresh in the summer heat.

One of Eun Jeong’s regular creations is a Spicy Cucumber Salad, Oi Muchim (오이 무침). I really love this stuff, and I can see it being the hit of any backyard BBQ.

Here’s what to do:

Slice a seedless Cucumber and mix them with around a teaspoon of fine Sea Salt for fifteen minutes.

At the same time soak half an onion, very thinly sliced in a mixture of water and a tablespoon of rice vinegar in the refrigerator.

Rinse the cucumbers and set them aside.

Mix three cloves of crushed Garlic with 1 teaspoon of Gochugaru (Korean Chili Powder), 1 teaspoon of Gochujang (Korean Red Pepper Paste), 1 teaspoon of Corn Syrup or Honey, 1 teaspoon of Rice Vinegar, and 2 teaspoons of toasted Sesame Seeds.

Mix and taste. Balance the flavors to your liking.

Drain the onions. Add the onions and cucumbers to the dressing.

Mix.

Serve chilled. The salad tastes best very, very cold.

    Seeing this article reminded me of something I’ve wanted to find out…

    I absolutely love 부추 (thin, uncooked strips of onion with bits of gochugaru mixed in, and perhaps a dash of vinegar(?)). Anyway, when I ask my Korean friends where to get it, most of them act like they’ve never heard of 부추 and I have to give a long explanation of what it is.

    Am I calling this (부추) by the wrong name or something? And, do you know how much gochugaru and any other ingredients to mix in to make it tasty? Sorry if this seems like a very simple question, but my cooking abilities normally don’t go beyond heating a pop tart in the microwave.

    I had a similar experience. My friend LOVES them, so I gave it a try and they’re gross.
    Absolutely not what I expected.

    I’ve eaten green tea cake with tomatoes and beans on top, in Seoul. Not a fan, really.

    I´ve actually eaten tomato icecream when I was at a farmer´s market in the UK. It was
    actually not that bad, but I prefer a more fruity or chocolaty taste to my ice cream though.
    This popsicle looks horrible though, but quite fancy looking :)

    Why would you ever want to make it? Here. Mix tomato juice and more sugar than you think is acceptable. Freeze.

    I had something like this at one of them buffet resturants,,,It was with the sushi/california roles section…cold..
    Had cukes, a little bit of onions…carrots..a delicious sauce..light, sweet, a touch of heat…no sesame seeds..but it had squid in it also..it was amazing..need a recipe for it hoping this is it..but some ingredients hard to find in my area…
